A new study finds potentially harmful ingredients hiding in gluten-free foods. America's love for these foods has now come at a cost, though Americans who have celiac disease is less than 1%, the gluten-free diets has remained to be the rage in the U.S
Reports suggest that the rice flour are the best substitute for wheat, barley, and rye and it tends to accumulate toxic metals that can potentially increase the risk heart diseases, cancer and neurological illness. Researchers at the University of Illinois at Chicago claimed that the rice acquires arsenic and mercury through fertilizers, water, soil and other others.
If constantly on the gluten-free diet, it can be resulted into bloating and weight gain. The researchers surveyed over 7,480 people about their respective diets, found out that among 73 people who has a gluten-free diet reportedly has more concentrated arsenic in their urine and mercury in their blood, Fox News has reported.
In 2015, there is an increase of 67 percent or about one-quarter of Americans reportedly have a gluten-free diet compared in 2013. According to Maria Argos, a study author and assistant professor in UIC School of Public Health, she claims that in Europe, there are already some regulations about the food -based arsenic exposure and it is time for the U.S to consider.
She further stated that they already started to regulate the levels of arsenic in water. But if there is an increase of rice flour consumption and people exposes to arsenic, it would totally make sense to start to regulate the metal in foods, Health 24 has reported.
Though Argos acknowledge that there are still a lot of study and research needs to be done before concluding whether gluten-free diet promotes serious danger in health. But recent results can't be ignored as other experts have noted that the diet which necessary for people who have celiac, gluten can be fatal.
