Watermelon Gazpacho: Complete Recipe and Helpful Benefits

- Red Onion (chopped)- ¼

- Fresh Watermelon- 1 cup
- Olive Oil- 2tbsp
- Sherry Vinegar- 1/2tbsp
- Salt- 1/4 tsp
- Lime Juice- 1tbsp
- Cucumber (chopped)- ½
- Yellow Pepper (chopped)- ½
To make the cold deliciousness that is gazpacho, place all the ingredients minus the olive oil, in a high-speed blender. Make sure to leave some fresh mint, chopped yellow pepper, and scallions for later garnishing. Blend the ingredients until well mixed. Slowly drizzle the olive oil and then pour the concoction into a bowl. Lastly, garnish the dish with the left over fresh mint, yellow pepper, and scallions for a more mouth-watery effect.
