1. Parmesan Crusted Chicken Breasts With Tomato And Basil
Rachael Ray is a household name and not just because of her TV show. The famous Food Network star has a great deal of "30 Minute Meals" o share with everyone online and the number 1 ranked dish is her parmesan crusted chicken breasts with tomato and basil along with peppers and onions.
You'll need 1 and a half to 2 pounds of red skin baby potatoes, 1 small red bell pepper (cut into strips), and 1 italian mild green pepper (cut thin). You'll need 1 thinly sliced yellow onion, 4 large garlic cloves, 1 teaspoon of crushed red pepper flakes, and 1/4 teaspoon of Extra Virgin Olive Oil. Salt and Pepper are also required as well as 2 cups shredded parmesan, 4 boneless chicken breasts, and 4 plum Roma tomatoes, seeded and chopped. The last ingredient is fresh basil, 15-20 leaves.
Once you have gathered everything for your feast, preheat the oven to 500 degrees Fahrenheit. Cut the potatoes in half and place on a tin-foil-covered cookie sheet. Also add peppers, garlic, onion, and crushed red pepper flakes. 2 to 3 tablespoons of oil should do the trick here too.
Next, heat a large nonstick skillet over medium high flame and prepare shredded cheese. Then season your chicken with pepper before pressing the chicken into the cheese. Add a tablespoon of EVOO and proceed to add the chicken, cooking it for 7 minutes or so on each side. The cheese is supposed to create a golden casing. Combined tomatoes and basil in a small bowl while the chicken is cooking. Once the chicken is ready to go, throw on the spoonfuls of the sauce and eat with potatoes, peppers, and onions.
2. Food.com's "To Die for Crock Pot Roast"
"To Die for Crock Pot Roast" could be as tasty as it sounds but you won't know until you give it a chance. The best part about this recipe? It only requires five simple ingredients -- and this includes water! But keep in mind that you will need a crock pot. If all that sounds good, just gather 4-5 pounds of beef roast, a package of dry, brown gravy mix, and then it's just dressing mixes. 1 package of dried Italian salad dressing mix and 1 package of ranch dressing mix will be all you need to go along with a half cup of water.
All one has to do is place the beef in the crockpot and mixed the dried ingerdients together before sprinkling over the roast. Pour water around it and just cook it on low for up to 9 hours, but at least 7.
Even if you are not a full-time vegetarian, it is always nice to switch things up and take some time off from the heavy meat diet that so many of us love. This quinoa dish -- via Kraft's website -- is easy, fast, and healthy all at once. It is most definitely worth a try!
The ingredients list is very simple -- 1 and a half cups of water, 1 cup quinoa, 2 cups of cherry tomatoes, a half cup of chopped fresh dill, 1 chopped English cucumber, and 1 yellow pepper -- also chopped.
To make it, bring water to a boil with quinoa and cover the pan. Simmer it on medium-low heat for 15 minutees before letting it cool. The rest is basic and easy -- just pour the ingredients on the rice and enjoy!
4. Pat's Famous Beef & Pork Chili
This one is last because it takes longer -- but is worth it! Everyone loves a good Chili Recipe -- especially with the Super Bowl being just weeks away. As you prepare for your Super Bowl party (or perhaps you are bringing a dish to pass at a party) try out this recipe -- courtesy of "The Neelys" from Food Network.
You'll need 6 slices of bacon -- preferably thick-cut Applewood Smoked Bacon, according to the recipe -- and a number of different vegetables and spices. These include 1 yellow bell pepper, 1 red bell pepper, 2 medium onions, and 4 cloves of garlic. Each of these ingredients need to be chopped.
You'll also need 3 tablespoons of chili powder, 1 tablespoon of ground cumin, 1 tablespoon of chipotle chili powder, and 2 teaspoons of dried oregano. Next you need to make sure you have 1 tablespoon smoked paprika, 1 can of black beans, and 1 can of kidney beans, drained and rinsed.
Some other ingredients are fairly self explanatory when making a chili dish -- salt, pepper, and 1 pound of beef, and 1 pound of ground pork. You'll also have to add in 1 cup of beer, 1 can of crushed tomatoes, and 1 can of diced tomatoes.
The last remaining ingredients you'll need are shredded cheddar, sliced scallions, sour cream, and lime wedges for garnish.
To make the whole thing, start off by cooking the bacon in a large Dutch oven. Once you can tell that the bacon is browned, mix in the garlic, bell pepper, chili powder, cumin, chipotle chili powder, oregano, and paprika. Sprinkle on the salt and pepper and cook until the veggies are softer.
Next, throw in the beef and break it up, preferably with a spatula. Throw in the pork after that and break it up as well before cooking it all until it is no longer pink.
After the meat is browned up, go ahead and mix in the beer and the beans, and stir it before adding in the tomatoes. Finally, turn things down to a simmer for an hour and a half. The rest is up to you!
If you have somewhere to go in 30 minutes, don't worry. You can make this recipe -- courtesy of Claire Robinson at Food Network -- in just 20 minutes and spend the other 10 minutes eating it. All you need is a cup of plain mashed potatoes, a quarter cup of flour, a half cup of shredded Gruyere cheese, and a half cup of diced ham. You'll also have to sprinkle in some salt and pepper. Vegetable oil tops off the ingredients list -- you'll need this for frying.
To make it all happen, simply mix the potatoes, flour, cheese, and ham with a spatula until it comes together. Sprinkle on the salt and pepper and divide it into 8 portions. Rub some flour onto your hands and form them into small flat disks, about a half inch thick. Use enough flour to keep the potatoes from getting stuck to your hands but be careful not to overdo it.
Heat up the oil in a nonstick skillet at medium-low heat and shallow-fry the croquettes until golden brown. This takes about 4 minutes per each side. Once you have decided that it is cooked thoroughly enough, just let it sit for a little bit and dig in!
Concluding Notes:
These five recipes that are listed are worth it and most of them are fairly fast and easy to do. Some of them, such as the chili recipe, are still worth it but are better saved for a time when you can allocate a few hours just in case something goes wrong or if it is your first time making the dish.
